Ingredients (yields ~20-24 cookies)

• Unsalted butter - 120 g (softened)

• Brown sugar - 100 g

• White sugar - 50 g

• Egg - 1 large

• Vanilla extract - 1 tsp

• Earth Brothers Classic Peanut Butter (Smooth) - 120 g

• All-purpose flour - 180 g

• Baking soda - ½ tsp

• Salt - ¼ tsp (skip if using salted butter)

• Red Train Peanut Chunk Powder (Roasted) - 80 g

• (Optional) extra roasted peanut halves for topping


Method

1. Cream butter & sugars

Beat the softened butter with brown sugar and white sugar until fluffy (about 2-3 mins).


2. Add wet ingredients

Beat in the egg and vanilla. Add Earth Brothers Classic Peanut Butter and mix until smooth.


3. Prepare dry mix

In another bowl, whisk flour, baking soda, and salt.


4. Combine

Fold dry mix into the wet mixture gradually until a dough forms.


5. Add peanut chunks

Stir in Red Train Peanut Chunk Powder - this adds crunch and roasted aroma.


6. ShapeScoop ~1 tbsp dough, roll into balls, and place on a lined baking tray.

Flatten slightly with your palm or fork. Press a few extra peanut halves on top for visual appeal.


7. BakeBake at 175 °C (350 °F) for 10-12 minutes, until edges are lightly golden but centers still soft.


8. Cool & enjoy

Cool 5 mins on tray, then transfer to wire rack.
